Following in “lunching‘s”’ footsteps, brunching has become a legitimate verb, becoming a regular in our weekend schedules and settling happily into our stomachs. It’s not surprising that the meal surpasses all other meal types. Brunch has got it all – if you’re into eggs, pancakes, french toast, waffles, granola… should I go on? Add in some delicious beverages, like a cappuccino or a freshly squeezed orange juice mimosa and there’s little more that you will need in your life.

We encourage you to make your next event a brunch event. Brunch food is enviable in the way that it can look so appetizing without even trying. Who of us has not salivated upon seeing a stack of pancakes covered with maple syrup or a perfectly cooked poached egg running through Hollandaise sauce. Fruits add a beautiful element of color texture and they’re good for you.

Check out some of our mini skewer recipes below. We used our Bamboo Paddle Pick Holder as a base to create a variety of breakfast bites such as fruit salad, chocolate chip pancakes and mini bacon egg and cheese sandwiches. The skewers used include the Noshi Bamboo Looped Skewer and Teppo Gushi Bamboo Paddle Pick, both of which come in a variety of sizes and are made out of natural bamboo.

Fruit Salad Skewers 8

1. Choose the fruit of your choice. We used watermelon and pineapple, but encourage you to use produce that is in season (strawberries, blueberries, oranges, kiwi, papaya, banana).

2. Cut the fruit into uniform shapes and thread onto skewers, alternating fruit types.

Chocolate Chip Pancakes 

Makes 36 mini pancakes

  • 2 Tbsp. butter
  • 1/2 cup milk
  • 2/3 cup flour
  • 1/2 tbsp. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg
  • 3 oz. semisweet chocolate chips
  • butter and canola oil for cooking
  1. Place the butter and milk in a small sauce pan and warm over low heat just until the butter has melted. Put aside and allow to cool.
  2. In a medium bowl, mix together the flour, sugar, baking powder and salt.
  3. In a separate bowl, whisk the egg. Slowly add in the milk and butter mixture. Once combined, add in the dry ingredients and mix until combined (don’t over-mix). Fold in the chocolate chips.
  4. Place 2 teaspoons of butter and/or oil (your preference) on a griddle or skillet over medium heat. Once heated, ladle a tablespoon of batter onto the griddle or skillet. Once bubbles begin to form and the pancake is golden brown (about 2 minutes), flip the pancake and cook until the second side is lightly browned (about 30 seconds).
  5. Use a cookie cutter or shape cutter to create the mini pancakes of your choice (we used a heart shape). Thread onto skewers with a piece of fruit of your choosing.

Mini Bacon Egg and Cheese Bites 7

Makes 20 mini sandwiches

  • 5 pieces of sliced bread of your choice
  • 3 Tbsp. butter (divided)
  • 2 eggs
  • Splash of milk
  • 3 oz. sharp cheddar cheese, cut into small cubes
  • 5 slices of cooked bacon, divided into 20 pieces
  • salt and pepper to taste
  1. Use 2 Tbsp of butter to butter the sliced bread and place on a hot griddle until golden brown and toasted. Use a round shape cutter to cut out 4 small circles from each slice of bread.
  2. Whisk the eggs in a bowl with a splash of milk. Melt 1 tablespoon of the butter in a skillet over medium heat. Pour the eggs onto the skillet and cook until thoroughly set, 3 to 4 minutes. Flip to create an omelet. Cut the omelet into 20 equal pieces.
  3. Assemble the sandwiches – place the bread on the bottom, followed by the eggs, cheese and bacon. Enjoy!
